Cooling Solution For New Sushi Concept

Cold Control, the award winning refrigeration and air conditioning specialists, were selected as the preferred contractor for the design, specification and installation of all the cooling requirements for the first two London based restaurants for a brand new concept in healthy Asian eating.

The Sushi restaurant specialises in using only the freshest ingredients to create a range of high quality yet inexpensive sushi, bento boxes, salads and soups for any occasion from working lunches to evening meals.

To compliment the vibrant atmosphere at the two flagship restaurants, it was essential that Cold Control installed top of the range Fujitsu ceiling cassette air conditioning systems in the main restaurant area, to create a cool and comfortable dining environment. Similarly, the same system was specified for the kitchen to ensure sushi temperatures remained at the eight degree centigrade maximum stipulated by the London Public Health and Safety Regulations.

The requirement for safe food storage and refrigeration is just as important as the air environment in food preparation areas. To ensure high quality hygiene in restaurant kitchens the correct installation of refrigeration equipment is essential and a UK requirement by law.

Cold Control's qualified and experienced engineers recommended that the restaurants store their sushi at temperatures between two degrees and four degrees centigrade. They were able to identify the most effective way to comply with the HACCP rules ensuring ingredients stay fresh, by installing a Celltherm Cold Room in each kitchen. These were specified by Cold Control to be economic, reliable and efficient, and were accompanied by a remote condensing unit, which provided an economic solution, keeping dust and heat out of the kitchen area. Both projects were completed smoothly within the designated six-week deadline.
